Description
The Floor Manager is tasked with daily management of Front of House (FOH) staff. Ensures all service standards are met and information properly communicated from management to staff and from staff to guests. Oversees the setup and breakdown of the dining room and regulates compliance with The Alinea Group (TAG) standards. Delegates tasks to staff in order to improve the guest experience. Monitors the needs of upper management while continuously attending to the staff’s morale, performance, and precise execution of service. Leads the training of the FOH staff and is responsible for continuing education. Strives to develop the staff to the peak of their profession and at the height of the hospitality industry.
Next is a pre-fixe experience that undergoes a creative overhaul every four months, each time inviting guests to explore a new culinary region, theme or moment in time. For example, Winter 2019’s Silk & Spice menu featured dishes that explored the spices and flavors along the historic trade route in Asia, Northeast Africa and Europe. Next was named the Best New Restaurant in the U.S. by the James Beard Foundation in 2012 and awarded a Michelin Star. Past menus have included Ancient Rome (2017), The Hunt (2012), and Alinea Retrospective (2018).
Responsibilities
- Displays expert level familiarity of service standards and procedures.
- Maintains complete knowledge of all menus, all ingredients, and all techniques.
- Leads, alongside the GM and AGMs, a pre-service meeting to properly communicate to the service staff the special reservations, dietary restrictions, changes to food and beverage menu items, and expectations of the service ahead.
- Participates in the development, implementation, and management of food and beverage marketing activities as directed by the GM.
- Develops and maintains department control and cash handling procedures.
- Develops and oversees service staff schedules.
- Ensures all assigned staff is informed with respect to disciplinary procedures and handling of grievances.
- Assists in menu planning and pricing as directed by GM.
- Plans and administers reviews and evaluates the work of FOH staff under the guidance of the GM.
- Assists the GM and TAG HR Team with the recruiting, training, professional development, and discipline of FOH staff.
- Plans and organizes private events meticulously following the contractual agreement signed by the guest.
- Ensures the maintenance and compliance of alcohol safety regulations.
- Establishes and maintains effective professional relationships with guests to ensure satisfaction and repeat business.
- Ensure that staff maintains a positive attitude and complies with all uniform standards.
- Supervise and manage set up and break down of dining room before and after service periods.
- Instruct staff on correct maintenance and use of equipment.
- Teach and maintain all TAG policies and service standards.
- Maintain and set an expert level example of guest relations.
- Greet and acknowledge all guests.
- Anticipate guest needs and respond promptly.
- Accommodate all requests for information courteously.
- Communicate Person of Note (PON) arrivals and special requests to fellow management.
- Respond to guest complaints with the utmost professionalism and represent TAG at all times. Balance the guest’s best interests with the company’s.
- Monitor and ensure that all aspects of service conform to departmental and TAG standards.
- Perform other duties as assigned by GM in relation to guest experience, staff experience, and the Restaurant’s business well-being.
- Maintain department records for all employees to be in accordance with Human Resources’ standards and regulations.
- Attend to the time and attendance punches of all FOH employees regularly and before the biweekly payroll data is collected.
- Administer verbal and written testing to FOH staff of menu items as GM requires.
Requirements
- Ability to communicate in English both verbally and in writing.
- Ability to compute basic mathematical calculations.
- Ability to perform basic computer functions including but not limited to email and word processing.
- Ability to navigate point of sales systems with ease.
- Ability to effectively use time and attendance software.
- Five (5) or more years experience in a restaurant service position with three (3) or more of these years having been in a supervisory role.
- Minimum twenty-one (21) years of age to serve alcoholic beverages.
Physical Requirements
- Must be able to seize, grasp, turn and hold objects with hands.
- Must be able to work on your feet for at least 10 hours.
- Fast paced movements are required to go from one part of the restaurant to another.
- Must be able to move, pull, carry, or lift at least 35 pounds.
- Occasionally kneel, bend, crouch and climb as required.
- Must be able to stand, walk, lift, bend and climb stairs for long periods of time.
- Must be able to bend, stoop, lift, reach, push, twist, walk, crouch, and squat.
Desirable Qualifications
- Associate’s degree in hospitality or related subject matter.
- Certification of previous training in liquor, wine, and/or food service.
- Any previous culinary or bartending training.
- Fluency in a foreign language preferred.
- Certification in alcoholic awareness program.
- Certification in CPR.
- Knowledge of TAG’s history, Chefs/Owners, and venue specifics.
- Knowledge of local, national, and international restaurants of similar caliber, theme, and/or price point.
- Prior formalized guest relations training.
- Prior formalized restaurant server training and experience.
- Ability to program and troubleshoot restaurant POS and other computer systems.
- Ability to suggestively sell selected food and beverage items.
